Ingredients
  

Cookie Dough
  • 1 cup unsalted butter, softened Make sure it’s softened to room temperature for easy creaming with sugar.
  • 1 cup granulated sugar Organic granulated sugar is preferred for a cleaner taste.
  • 1 large egg
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour Spoon into the measuring cup and level it off to avoid dry cookies.
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup rainbow sprinkles
  • 0.5 cup white chocolate chips
Decoration
  • as needed extra rainbow sprinkles For rolling the cookie balls.
  • as desired edible glitter Optional, but highly recommended for sparkle!

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Cookie Dough
  1. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  2. Beat in the egg and vanilla extract until well combined.
Dry Ingredients
  1. In a separate bowl, whisk together the flour, baking powder, and salt.
Combine
  1. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  2. Fold in the rainbow sprinkles and white chocolate chips until evenly distributed.
Forming Cookies
  1. Scoop tablespoon-sized portions of dough, roll into balls, and roll each ball in extra rainbow sprinkles.
  2. Arrange the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Cool the cookies on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Decoration
  1. Sprinkle edible glitter over the cooled cookies for a magical effect.
