- In a large mixing bowl, combine the rolled oats, almond butter, and honey. Mix well until everything is beautifully combined and forms a sticky mixture—about 2-3 minutes.
- Fold in the dried raspberries, chopped almonds, shredded coconut, vanilla extract, and salt. Stir until all ingredients are evenly distributed, about 1-2 minutes.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter. (Pro tip: Wet your hands slightly to prevent sticking!)
- Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm them up.
- Transfer the energy bites to an airtight container and store them in the refrigerator for up to a week.
