  1. In a large mixing bowl, combine the rolled oats, almond butter, and honey. Mix well until everything is beautifully combined and forms a sticky mixture—about 2-3 minutes.
  2. Fold in the dried raspberries, chopped almonds, shredded coconut, vanilla extract, and salt. Stir until all ingredients are evenly distributed, about 1-2 minutes.
  3. Using your hands, roll the mixture into small balls, about 1 inch in diameter. (Pro tip: Wet your hands slightly to prevent sticking!)
  4. Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm them up.
  5. Transfer the energy bites to an airtight container and store them in the refrigerator for up to a week.
