Preparation
- In a bowl, mix the softened cream cheese and sweetened condensed milk until smooth.
- Stir in vanilla and a tiny pinch of salt.
- Add shredded coconut and mix until it turns into a thick, scoopable dough. Chill in the fridge for 15 to 20 minutes if too sticky.
- Scoop and roll into 1 inch balls, then roll each one in extra coconut.
- Chill on a plate or baking sheet lined with parchment paper for at least 1 hour.
Notes
Store in an airtight container in the fridge for up to 7 days or freeze for up to 2 months. They are best served cold, and great for gifts.
