  • 2 cups Sweetened shredded coconut, plus extra for rolling
  • 14 oz Sweetened condensed milk
  • 8 oz Softened cream cheese
  • 1 tsp Vanilla extract
  • 1 pinch Salt A tiny pinch is important to balance sweetness.
  • optional Powdered sugar if your mix feels too soft For extra sweetness and firmness.

Method
 

Preparation
  1. In a bowl, mix the softened cream cheese and sweetened condensed milk until smooth.
  2. Stir in vanilla and a tiny pinch of salt.
  3. Add shredded coconut and mix until it turns into a thick, scoopable dough. Chill in the fridge for 15 to 20 minutes if too sticky.
  4. Scoop and roll into 1 inch balls, then roll each one in extra coconut.
  5. Chill on a plate or baking sheet lined with parchment paper for at least 1 hour.

Notes

Store in an airtight container in the fridge for up to 7 days or freeze for up to 2 months. They are best served cold, and great for gifts.
