Preparation
- Preheat the oven to 375°F (190°C).
- Roll out puff pastry on a lightly floured surface, or place flatbread on a parchment-lined baking sheet.
Cooking
- In a pan, heat olive oil over medium heat, add sliced onions and cook until caramelized, about 15 minutes.
- Layer Brie slices on flatbread, followed by caramelized onions and chopped figs. Season with salt and pepper.
- Whisk balsamic vinegar and honey together, then drizzle over the flatbread.
- Bake for 12-15 minutes until edges are golden and Brie is melty.
- Garnish with fresh thyme before serving.
Notes
For an even crispier base, bake the flatbread on a pizza stone. Leftovers can be stored in an airtight container for up to 3 days.
