  • ½ cup dried figs, chopped Choose organic dried figs for moisture and sweetness.
  • 1 small onion, thinly sliced Sweet onion like Vidalia is preferred.

  • 1 tbsp olive oil Extra virgin olive oil is recommended.
  • 2 tbsp balsamic vinegar Use good-quality balsamic reduction.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Roll out puff pastry on a lightly floured surface, or place flatbread on a parchment-lined baking sheet.
Cooking
  1. In a pan, heat olive oil over medium heat, add sliced onions and cook until caramelized, about 15 minutes.
  2. Layer Brie slices on flatbread, followed by caramelized onions and chopped figs. Season with salt and pepper.
  3. Whisk balsamic vinegar and honey together, then drizzle over the flatbread.
  4. Bake for 12-15 minutes until edges are golden and Brie is melty.
  5. Garnish with fresh thyme before serving.

Notes

For an even crispier base, bake the flatbread on a pizza stone. Leftovers can be stored in an airtight container for up to 3 days.
