  • 1 cup unsalted butter, softened Make sure your butter is at room temperature for easy mixing. I recommend using a high-quality brand like Challenge or Land O'Lakes.
  • 1 cup granulated sugar For that perfect sweetness.
  • 1 large egg Ensure it’s at room temperature for an even mix.
  • 1 teaspoon vanilla extract Use pure vanilla extract for a more intense flavor.
  • 3 cups all-purpose flour A staple in cookie baking, use a good quality brand like King Arthur.
  • 1/2 teaspoon baking soda This gives the cookies a little lift.
  • 1/2 teaspoon salt Balances the sweetness.
  • 1/2 cup cotton candy flavored bits These are key! You can usually find them during the summer season at most supermarkets. I suggest the Funfetti brand for vibrant color and flavor.
  • a few drops pink food coloring To achieve that lovely whimsical color.
  • as desired cotton candy for topping (optional) For that extra touch of fun and sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy (about 3-4 minutes).
  3. Mix in the egg and vanilla extract until well combined, making sure everything is fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until a dough forms. Don’t overmix!
  6. Gently fold in the cotton candy flavored bits and a few drops of pink food coloring.
Baking
  1. Scoop tablespoons of dough and roll them into balls. Place them on the baking sheet, spaced about 2 inches apart. Flatten each ball slightly using the back of a fork.
  2. Bake for 10-12 minutes or until the edges are lightly golden. Keep an eye on them; you want them to be soft in the center!
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
  4. Top each cookie with a piece of cotton candy before serving for added whimsy!

Notes

Store your Cotton Candy Cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to 3 months. Chill the dough for about 30 minutes before baking for thicker cookies.
