Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy (about 3-4 minutes).
- Mix in the egg and vanilla extract until well combined, making sure everything is fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until a dough forms. Don’t overmix!
- Gently fold in the cotton candy flavored bits and a few drops of pink food coloring.
Baking
- Scoop tablespoons of dough and roll them into balls. Place them on the baking sheet, spaced about 2 inches apart. Flatten each ball slightly using the back of a fork.
- Bake for 10-12 minutes or until the edges are lightly golden. Keep an eye on them; you want them to be soft in the center!
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
- Top each cookie with a piece of cotton candy before serving for added whimsy!
Notes
Store your Cotton Candy Cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to 3 months. Chill the dough for about 30 minutes before baking for thicker cookies.
