For the Roasted Cauliflower
  • 1 large head cauliflower, cut into florets Choose a firm, fresh cauliflower
  • 3 tbsp olive oil Use high-quality extra virgin for the best flavor
  • 4 cloves garlic, minced You can use roasted garlic for a sweeter taste
  • 1 tsp dried Italian seasoning Feel free to replace with fresh herbs
  • 1/2 tsp salt Adjust according to your taste
  • 1/4 tsp black pepper Freshly cracked for best flavor
For the Cheese Topping
  • 1/2 cup grated Parmesan cheese Freshly grated works wonders
  • 1 cup shredded mozzarella cheese I love using whole milk mozzarella for creaminess
Garnish
  • Fresh parsley, chopped Optional but adds freshness

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, toss the cauliflower florets with olive oil, minced garlic, Italian seasoning, salt, and black pepper. Make sure every piece is beautifully coated.
Roasting
  1. Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, stirring halfway through. You’ll know it’s ready when the edges start to become golden and crispy!
Cheese Addition
  1. Remove the cauliflower from the oven. Sprinkle the grated Parmesan cheese first, followed by the shredded mozzarella. Return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly. Keep an eye on it to avoid burning!
Serving
  1. Take the cauliflower out of the oven and garnish with fresh parsley. Serve immediately for that gooey, cheesy goodness that makes everyone swoon!

Notes
