Ingredients
  

Dry Ingredients
  • 1 cup rolled oats (old-fashioned or quick-cooking, gluten-free if needed) Use high-quality oats for the best texture and flavor.
  • 1/2 cup vanilla protein powder (whey, casein, or plant-based) I prefer a plant-based protein for a lighter taste.
  • 1/4 cup freeze-dried blueberries, finely ground Blend these until fine for concentrated blueberry flavor.
  • 1 tablespoon chia seeds or flax seeds (optional) Great for health and texture!
Wet Ingredients
  • 1/4 cup unsweetened applesauce (or mashed banana) Great for moisture and sweetness.
  • 1/4 cup cream cheese, softened (or vegan alternative) Philadelphia’s cream cheese is excellent!
  • 2 tablespoons honey or maple syrup Sweeten to your liking; both add nice flavor!
  • 1-2 tablespoons milk (dairy or non-dairy) as needed To adjust the consistency as necessary.
Additional Ingredients
  • 1/4 cup frozen blueberries (thawed and drained) For that burst of fresh flavor in every bite.
  • 2 tablespoons cream cheese, softened For the glaze!
  • 1/2 teaspoon vanilla extract A dash of vanilla adds richness.
  • 1-2 teaspoons powdered sugar (optional) For sweetness in the glaze.
  • Fresh blueberries for decoration They make for a perfect visual delight!

Method
 

Preparation
  1. Grind freeze-dried blueberries into a fine powder using a blender or food processor. This will provide an intense blueberry flavor!
  2. In a bowl, combine oats, protein powder, freeze-dried blueberry powder, and chia or flax seeds. Stir until everything is well incorporated.
  3. In another bowl, whisk together the applesauce (or mashed banana), cream cheese, and honey or maple syrup until smooth.
  4. Add the wet ingredients to the dry ingredients and mix well until you achieve a dough-like consistency.
  5. Gently fold in the thawed and drained frozen blueberries.
  6. If the mixture seems too dry, add milk 1 tablespoon at a time until you can roll it into balls.
  7. Shape the mixture into bite-sized balls and place them on a parchment-lined plate.
  8. In a small bowl, whisk together softened cream cheese, milk, vanilla extract, and powdered sugar until smooth.
  9. Refrigerate the bites for at least 30 minutes to firm up.
  10. Drizzle with the glaze and top with fresh blueberries before serving.
Serving & Storage

  2. Store in an airtight container in the fridge for up to a week or freeze for up to a month.

Notes

If you find the mixture too sticky, lightly grease your hands for easier rolling. Avoid over-mixing once you add in your blueberries.
