Preparation
- Grind freeze-dried blueberries into a fine powder using a blender or food processor. This will provide an intense blueberry flavor!
- In a bowl, combine oats, protein powder, freeze-dried blueberry powder, and chia or flax seeds. Stir until everything is well incorporated.
- In another bowl, whisk together the applesauce (or mashed banana), cream cheese, and honey or maple syrup until smooth.
- Add the wet ingredients to the dry ingredients and mix well until you achieve a dough-like consistency.
- Gently fold in the thawed and drained frozen blueberries.
- If the mixture seems too dry, add milk 1 tablespoon at a time until you can roll it into balls.
- Shape the mixture into bite-sized balls and place them on a parchment-lined plate.
- In a small bowl, whisk together softened cream cheese, milk, vanilla extract, and powdered sugar until smooth.
- Refrigerate the bites for at least 30 minutes to firm up.
- Drizzle with the glaze and top with fresh blueberries before serving.
