Ingredients
  

Apple Filling
  • 2 pieces Granny Smith apples, peeled & diced For a tart flavor.
  • 1/4 cup granulated sugar Adjust based on apple sweetness.
  • 1/2 teaspoon cinnamon A warm hug of flavor.
Oat Topping
  • 1 cup rolled oats Hearty and chewy.
  • 1/2 cup all-purpose flour or almond flour Your choice of base.
  • 1/4 cup butter or dairy-free alternative, room temperature Use a brand like Kerrygold for richness.
  • 1/4 cup brown sugar For that perfect caramelized sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Toss the peeled and diced Granny Smith apples in a small bowl with 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Let them sit for about 10 minutes to absorb the flavors.
  3. In a separate bowl, combine 1 cup rolled oats, 1/2 cup flour, and 1/4 cup brown sugar. Add in 1/4 cup of room-temperature butter, and mix together with your fingers or a fork until it forms a crumbly texture.
  4. Press about a spoonful of the oat mixture into the base of each mini muffin cup, creating a little nest.
  5. Top with a generous spoonful of the cinnamon-sugar apple mixture and sprinkle a little more oat mixture over the apples.
Baking
  1. Bake for 15-20 minutes, or until they are golden and crispy. Let cool in the tin for about 5 minutes before gently removing them and letting them cool on a wire rack.

Notes

Storage Recommendations: Keep uneaten Apple Crisp Bites in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. They also freeze beautifully for up to 2 months! To make-ahead, assemble your bites in advance and refrigerate until you’re ready to bake.
